About Us






The Ferm produces a wide range of fermented products made of commonly discarded byproducts, such as cauliflower leaves and broccoli stalks. We work with a small group of trusted restaurants, catering companies and vendors to divert waste and transform them into healthy probiotic foods for everyone.

Our purpose is to normalise utilising all parts of the harvest into our diets and reduce greenhouse gas emissions with one jar of kimchi at a time. Our vision is to create a circular economy within the UK food systems that are more self-sufficient and culturally diverse. We also hope to bring better gut health through more probiotic meals. Our mission is to continuously research and experiment with new ways to reduce food waste and collaborate with all levels of the supply chain.


We’re proud to be playing our part in helping to alter tastes and perceptions about food waste. Climate justice is our ethos and we will dedicate ourselves to bringing ethically produced sustainably sourced jars of perfection to you. I'm from Gwangju, South Korea, a town known for good food and is the home to the World Institute of Kimchi. I've participated in Kimjang, the practice of the whole neighborhood coming together to make kilos of kimchi since I was little. It is a collective ritual that I shared with friends as I studied abroad, now through partnerships with restaurateurs and farmers.


Through my MA in Design for Social Innovation and Sustainable Futures, I researched food waste, food insecurity, and food sovereignty. After writing my dissertation on biases within food systems, I decided to reclaim my heritage and take up space in the UK kimchi market. I researched Korean food anthropology, archived preservation methods, and low-waste generational insights, and experimented on how these can be adopted in the UK.


The Ferm is the medium of expansion of my low-carbon lifestyle and activism by tackling systematic food waste on production and manufacturing levels. I hope to exemplify the joys of sharing and circular economy as we innovate our way out of the climate crisis.

I bought a jar of this kimchi at West Hampstead farmers market and it is amazing - highly recommend!

My fave pre made kimchi

The jars both leaked in the packaging box and one of the jar lids was damaged. The liquid continuously leaked out of the jars without being opened and once I opened it there was hardly any liquid left in the top half. Pretty disappointed for the price I paid for 2 jars and postage

The food is fantastic and even better than the 1st batch we purchased, especially, for me, the addictive aroma opening the cauliflower leaf mild kimchi. Keep up the great work! If possible, would be helpful to have a cheaper delivery service and perfect would be, to be able to buy these products over the counter from a London retail shop.

Best kimchi ever

I absolutely love this kimchi, I can eat it with anything, I especially love it with rice! Its soft and crunchy holding flavour in every bite. I’ve tried other kimchi’s but this is number 1. It’s also extremely low in calories so it’s definitely for me.


Really delicious and authentic tasting kimchi. So happy to find a vegan version! The spicy is my favorite, but I would consider the flavor to be more mild.


Lovely flavours and very versatile, I've been adding as a side to steaks but also vegetarian mains, works with all sorts of dishes.


Received very quickly, unfortunately it had leaked slightly. Contacted them. Very quick response. No issues and resent another to replace. Cannot fault them. Also products were and still are delicious 😋

I’ve been buying this Kimchi from my local farmers market but they are only there once a month so now order online. The cauliflower leaf kimchi is my favourite. Amazing, authentic, healthy product! Well done! :)
